This royal icing recipe is smooth, versatile, and perfect for decorating cookies. With just a few simple ingredients, you can create a glossy finish for piping, flooding, and adding beautiful details to your holiday treats!

- 450 grams icing sugar
- 3 tablespoons meringue powder
- 6 tablespoons water (more or less, depends on the consistency)
- 1 teaspoon bright white gel food colouring
- 1/2 teaspoon clear vanilla extract
Instructions
- Combine icing sugar and meringue powder in the mixing bowl of a stand mixer with a paddle attachment.
- Mix at medium low speed for 30 seconds to make sure they are all well mixed.
- Continue the mixer at medium-low speed and gradually add in the water, gel food colouring and clear vanilla extract.
- Continue to mix until everything comes together. The mixture does not look appealing at this stage. Just keep mixing until it turns into a paste-like texture.
- Then turn on the mixer to medium-high speed and continue to mix until the royal icing turns glossy and smooth. Add a little water at a time until it reaches the desired consistency.
Notes
- Add a tiny drop of water at a time to thin out the icing or add a small amount of icing sugar to thicken it until it reaches your desired consistency.
- If you do not have clear vanilla extract, the normal one works fine, but the royal icing may turn into a little bit on the yellow-ish side.
- Use gel food colouring to create the colour to avoid changing the consistency.
- Always add gel food colouring using a toothpick with a very small amount at a time to avoid getting the shade becomes too dark.
- Be mindful, the royal icing will become darker when the time goes on. Please make sure not to mix the colour too dark at the beginning.
