What better combination for Chinese New Year? Red cookies that crumble and melt in your mouth, all designed in any shape of your choosing – but why not try my idea of a Mickey Mouse shape for a fun and child friendly start to the New Year? These cookies taste absolutely delicious – if you bake a batch of red velvet cookies, you are already prosperous and your family is most definitely lucky!

- 190 g light brown sugar
- 115 g unsalted butter (soften)
- 1 pc egg
- 1/4 tsp pure vanilla extract
- 1/4 tsp red velvet food colour
- 235 g all purpose flour (sifted)
- 15 g cocoa powder (sifted)
- 1/4 tsp baking soda
Instructions
- Pre heat the oven to 170 degrees C.
- Put the brown sugar and the softened unsalted butter in a stand mixer at medium speed for 2 minutes and beat until well mixed.
- Add the egg, vanilla extract and the red velvet food colouring into the butter mixture and mix for one minute.
- Sift the all purpose flour, cocoa powder and baking soda. Set aside.
- Gradually add in the flour mixture until it well combined. Do not over mix it.
- Once the dough is done, roll it into approximately 4mm thickness and wrap in cling film. Chill it for about 30-60 minutes in fridge.
- Take the chilled dough and use your desired cookie cutter to cut out any shape you like.
- Bake cookies in the oven for about 15 minutes (170 C)
- Once they are baked, let the cookies sit on the baking tray for about 5 minutes before you move them to a wire rack and let them cool completely.
- Enjoy with a cup of tea!
