Description

It is an ULTIMATE Banana cake ever! It is so good, fluffy, moist, with a mildly sweet favour and it is super easy to make. This Banana Cake is perfect for an afternoon treat especially when you crave for some sweetness after school or work.


Ingredients

  • 80 g melted butter
  • 80 g granulated white sugar
  • 3 pcs medium over-ripe banana
  • 2 tbsp whole milk
  • 1/2 tsp pure vanilla extract
  • 2 pcs large eggs
  • 160 g cake flour
  • 1/2 tsp baking soda
  • 1 tsp baking powder

Instructions

  1. Preheat the oven to 170°C (but I set my oven to 165°C because each oven is different). Line and grease a 1 lb loaf tin.
  2. Melt the butter in a saucepan first. Then pour the butter into a mixing bowl with the sugar and stir in.

  3. For the dry ingredients, sift the flour, mix with the baking soda and baking powder in another mixing bowl. Then add the dry ingredients into the butter mixture. Mix well until well combined.
  4. Mash the bananas with a fork and then mix with the butter mixture. Set it aside.
  5. Add the vanilla extract, milk and the eggs to the mixture.
  6. Use a spatula or wooden spoon to stir them and mix until well combined.
  7. Pour the batter into the prepared tin and drop it onto the counter three or four times. This will force the air in the batter to bubble to the surface while also serving to level your batter. Bake it for about 35-40 minutes or until the cake has risen and is a golden colour. Insert a skewer or knife into the centre and the cake is ready if it comes out clean.
  8. Remove from the oven and cool for 5-10 minutes in the tin, then transfer to a wire rack to cool completely.

  9. Enjoy with a cup of tea!

Notes

  • This recipe is for a 1-lb loaf tin.
  • If you want to bake this cake in a 2-lb loaf tin, please adjust the servings to 2 loaf.  The recipe will calculate the right amount of ingredients for you!
