Bananas come in different sizes and colors; most varieties are yellow when ripe but some are red or purple. We all know that bananas are good for our body because they are full of nutritional value. Why not use them to make my Banana Loaf Cake? One stone, two birds!

All those vitamins and nutrients can do major good for your body and mind. You’re snacking toward these benefits every time you eat one. Those benefits are lower blood pressure, a healthier heart, stronger bones, better digestion and a sharper mind. Ripe bananas

Well, have you ever had ripe bananas lying on the counter top in the kitchen or on your dining table in the fruit bowl? When they are freshly displayed in a eye-catching spot in a supermarket or a grocery store, you can almost feel their freshness: you want to buy them! You are easily attracted to buy a whole BIG bunch. When they are turning yellow and firm in texture, the sweetness flavour and creamy texture. Oh! It is so satisfying!!!

But after you bring them home and put them on the countertop in the kitchen or the dining table for a few days…the ones that don’t get eaten become dark and spotty and not very appetizing at all! Now you have a problem: I know that I will not peel them and eat them but on the other hand, it is a waste to throw them away. Do you feel the same way?!? It happens every time.

If you have had this experience, keep reading. I am going to show you a recipe for these over-ripe buddies so that we do not need to throw them away and actually find a tasty use for them.  

How to make the most fluffy and moist banana cake ever

First of all, you DO NOT need any electronic equipment to make this awesome banana loaf cake. What you need is just a spatula or if you do not have one, you can use a wooden spoon, and a fork to smash the bananas. It’s that easy!

Banana Loaf Cake is a treat

What a treat!  If you do have a few over-ripe bananas sitting on top of your countertop right now, why not use them and turn them into a delicious cake?  I promise once you know how to make it, it is irresistible!!  It is so good, fluffy, moist, with a mildly sweet favour and it is SUPER easy to make!  It is PERFECT for an afternoon treat especially when you crave for some sweetness after school or work! It is an ULTIMATE Banana cake ever! It is so good, fluffy, moist, with a mildly sweet favour and it is super easy to make. This Banana Cake is perfect for an afternoon treat especially when you crave for some sweetness after school or work.

EQUIPMENT

  • 1lb loaf tin

INGREDIENTS 

  • 80 g melted butter
  • 80 g granulated white sugar
  • 3 pcs medium over-ripe banana
  • 2 tbsp whole milk
  • 1/2 tsp pure vanilla extract
  • 2 pcs large eggs
  • 160 g cake flour
  • 1/2 tsp baking soda
  • 1 tsp baking powder

INSTRUCTIONS

  • Preheat the oven to 170°C (but I set my oven to 165°C because each oven is different). Line and grease a 1 lb loaf tin.
  • Melt the butter in a saucepan first. Then pour the butter into a mixing bowl with the sugar and stir in.
  • For the dry ingredients, sift the flour, mix with the baking soda and baking powder in another mixing bowl. Then add the dry ingredients into the butter mixture. Mix well until well combined.
  • Mash the bananas with a fork and then mix with the butter mixture. Set it aside.
  • Add the vanilla extract, milk and the eggs to the mixture.
  • Use a spatula or wooden spoon to stir them and mix until well combined.
  • Pour the batter into the prepared tin and drop it onto the counter three or four times. This will force the air in the batter to bubble to the surface while also serving to level your batter. Bake it for about 35-40 minutes or until the cake has risen and is a golden colour. Insert a skewer or knife into the centre and the cake is ready if it comes out clean.
  • Remove from the oven and cool for 5-10 minutes in the tin, then transfer to a wire rack to cool completely.
  • Enjoy with a cup of tea!

NOTES

  • This recipe is for a 1-lb loaf tin.
  • If you want to bake this cake in a 2-lb loaf tin, please adjust the servings to 2 loaf.  The recipe will calculate the right amount of ingredients for you!
