Her recipe blends bold, savoury flavours with soft, fluffy bread, and I loved the idea of incorporating sambal oelek into a cheesy, spicy roll.   • 50 g milk
  • 10 g bread flour

For the dough:

  • 167g bread flour
  • 25g caster sugar
  • 1/4 tsp salt
  • 1/2 tsp instant yeast
  • 62 ml milk, lukewarm
  • 1/2 egg, beaten, reserve 1/2 for egg wash
  • 27g unsalted butter, softened and diced
  • 1/2 tsp vegetable oil (for the proofing bowl)

For the filling:

  • 6 tsp sambal oelek
  • 12 tsp grated Parmesan cheese (or more, because who doesnโ€™t love extra cheese?)

For the egg wash:

  • 1/2 beaten egg (from earlier)
  • 1/2 tbsp milk
