  • 1 tbsp instant coffee powder
  • 1/2 tsp vanilla extract
  • 90 g sour cream
  • 3/4 tbsp water – hot
  • 80 g walnuts – slightly chopped

For the Streusel

  • 32 g unsalted butter – melted & cooled
  • 45 g all purpose flour
  • 35 g light brown sugar
  • 1/4 tsp ground cinnamon
  • Pinch of salt

Make the Streusel

  1. In a bowl, combine flour, brown sugar, cinnamon, and salt. Add cooled melted butter and toss with a fork until the mixture becomes crumbly and sandy.

    Very good! I cut down the sugar and instead of streusel I sprinkled some chopped walnut and sugar on the muffins. Also, I used yogurt instead of sour cream. Turned out perfect! Thanks for sharing the recipe.
