Who doesn’t like cheese? How about cheese lovingly baked into a twisty, crunchy, savoury Cheese Straw Twists that melts in your mouth? A perfect finger snack for party-goers of all ages but youโll need to bake quite a few because when these babies come out of the kitchen they go FAST!

Cheese for Cheese Straw Twists
Letโs talk about cheese. In this recipe, I need two kinds of cheese, one is Cheddar and the other is Parmesan. Cheddar is a kind of medium hard cheese with a strong-tasting flavor. I like using mature Cheddar because I like strong cheesy taste. The more mature Cheddar is, the stronger taste it is. Another kind of cheese is Parmesan which is hard and quite salty and strong flavor too. If you do not want that strong flavor, you can use a similar vegetarian hard cheese instead.

What you’ll need
Butter
What makes the cheese straw so flaky? Yes, BUTTER!
You have to use the best butter. I use French butter that I buy in the local bakery famous supply stores, Phoon Huat. I like using French butter in my bakes. The reason is it has a very mild flavor which will not affect the taste of my bakes. If you use salted butter, you just need to omit the pinch of salt in the recipe.
Pro tip: Rub the chilled butter into the flour until it turns into breadcrumb like texture.
I take the butter straight from the refrigerator and rub into the butter. Honestly, at the beginning, the butter is really hard and difficult to rub it. A few minutes later, it gets easier and easier. Please do not leave the butter in the room temperature because it will be too soft and will melt in the flour. Then it will affect the flaky texture.

Description
FLAKY, BUTTERY and CHEESY Cheese Straw Twists is a perfect snacks for parties. They have a hint of kick from the cayenne pepper which is perfectly match with a glass of white wine. It is easy to make and very yummy. You will easily impress your guests!
Ingredients
- 375 g all purpose flour
- 225 g unsalted butter (chilled & diced)
- 150 g mature cheddar cheese
- 80 g Parmesan cheese
- 1 tsp cayenne pepper
- 1 pinch salt
- 2 pcs egg yolks
- 4–5 tbsp cold water
- 1/2 tsp English mustard powder ((optional))
Instructions
- Grate the cheddar cheese and Parmesan cheese. Set aside.
- Sift the flour and a pinch of salt into a bowl. .
- Add the chilled butter. Using your fingertips, rub in the butter until all the lumps are gone and the texture is like fine breadcrumbs
- Stir in the grated cheese, cayenne pepper and the egg yolks. Add 4-5 tablespoons of cold water and mix to a firm dough.
- Wrap in cling film into 2 portions. Chill the doughs in the fridge for at least 30 minutes or until it is firm.
- Preheat the oven to 170C/325F. Line a baking sheet with baking parchment.
- Roll out the dough to a square, roughly the thickness of 3cm. Cut the square in half, then cut each half into 2-3cm strips. Carefully transfer onto the lined baking sheet and twist it.
- Bake for 15-20 minutes, until crisp, then leave to cool on the tray. Enjoy!
