- Light Brown: Chocolate Brown + Super Red + Bright White
- Brown: Chocolate Brown + Black + Regal Purple
- Light Green: Forest Green + Gold + Bright White
- Forest Green: Forest Green + Bright White
- Deep Green: forest Green + Small drop of Super Black + Tiny drop of Sky Blue
My go-to royal icing
Actually, it is very simple. Basic ingredients are, meringue powder, icing sugar and water. This royal icing from this recipe will be enough for this project. I totally iced around 30 decorated Christmas cookies.
You can check out my video tutorial here to see how I make the royal icing in action. This is my go-to royal icing recipe.
For this Christmas cookie decorating ideas project, I improved the royal icing recipe by adding the following two more ingredients. For the extract quantity of ingredients, please check out the recipe card below.
- adding the white gel food colouring for getting the foundation colour bright white first, so that it will be a lot easier to dye into different colours.
- adding flavour to the icing by mixing 1/2 teaspoon of clear vanilla extract to make the icing more flavourful. You can also try using other flavouring, Lemon Extract or Butter Bakery Emulsion.
However, I have been using my go-to royal icing recipe without these two extra, it works perfectly fine!

Description
This royal icing recipe is smooth, versatile, and perfect for decorating cookies. With just a few simple ingredients, you can create a glossy finish for piping, flooding, and adding beautiful details to your holiday treats!
Ingredients
- 450 grams icing sugar
- 3 tablespoons meringue powder
- 6 tablespoons water (more or less, depends on the consistency)
- 1 teaspoon bright white gel food colouring
- 1/2 teaspoon clear vanilla extract
Instructions
- Combine icing sugar and meringue powder in the mixing bowl of a stand mixer with a paddle attachment.
- Mix at medium low speed for 30 seconds to make sure they are all well mixed.
- Continue the mixer at medium-low speed and gradually add in the water, gel food colouring and clear vanilla extract.
- Continue to mix until everything comes together. The mixture does not look appealing at this stage. Just keep mixing until it turns into a paste-like texture.
- Then turn on the mixer to medium-high speed and continue to mix until the royal icing turns glossy and smooth. Add a little water at a time until it reaches the desired consistency.
Notes
- Add a tiny drop of water at a time to thin out the icing or add a small amount of icing sugar to thicken it until it reaches your desired consistency.ย ย
- If you do not have clear vanilla extract, the normal one works fine, but the royal icing may turn into a little bit on the yellow-ish side.
- Use gel food colouring to create the colour to avoid changing the consistency.ย ย
- Always add gel food colouring using a toothpick with a very small amount at a time to avoid getting the shade becomes too dark.ย ย
- Be mindful, the royal icing will become darker when the time goes on. ย Please make sure not to mix the colour too dark at the beginning.ย
