Description
This Chocolate Bundt Cake is rich, moist, and full of deep chocolate flavour. Topped with a silky chocolate ganache and a hidden chocolate surprise, it’s the perfect cake for birthdays, celebrations, or any special occasion.
Ingredients
For the Cake Batter
- 230 ml water, boiling hot
- 1 tbsp instant coffee granules
- 150 ml vegetable oil
- 180 g caster sugar
- 130 g light brown sugar
- 5 large eggs
- 2 tsp vanilla extract
- 227 g sour cream
- 240 g all purpose flour
- 84 g unsweetened cocoa powder
- 3/4 tsp baking powder
- 1 tsp baking soda
- 3/4 tsp salt
For the Chocolate Ganache
- 200 g dark chocolate
- 300 ml double cream
- 1 tsp vanilla extract
- 1/8 tsp fine sea salt
Instructions
Make the Cake Batter
- Preheat your oven to 160°C fan.Dissolve the instant coffee granules in the hot water and set the mixture aside to cool.
- In a large mixing bowl, combine the vegetable oil, caster sugar, and light brown sugar. Whisk until well blended.
- Add the eggs, one at a time, whisking well after each addition until fully incorporated.
- Pour in the vanilla extract and the cooled coffee mixture, then give everything a quick whisk.
- Add the sour cream and whisk until smooth and well combined.
- Place a sieve over the bowl and sift in the plain flour, cocoa powder, baking powder, baking soda, and salt.
- Using a spatula, gently fold the dry ingredients into the wet ingredients until no dry flour remains. The batter may look a little lumpy at this stage, but don’t worry—that’s perfectly normal. Switch back to the whisk and whisk until the batter is smooth and cohesive.
- Generously spray a 12-cup Bundt pan with cake release spray, making sure to coat all the grooves and decorative details. This will help the cake release beautifully after baking.
- Pour the batter into the prepared Bundt pan. Gently smooth the top if needed.
- Bake in the preheated oven at 160°C fan for 50 minutes, or until a skewer inserted into the centre comes out clean.
