Alright, let’s bake!
What Is Tangzhong and Why Does It Make Bread So Soft?
Tangzhong is a Japanese bread-making technique where a small portion of flour is cooked with milk or water before being added to the dough. This simple step helps the flour absorb more moisture, creating a soft, fluffy, and tender bread with a longer-lasting freshness. Ingredients in this Milk Bread Loaf Recipe

At a glance: Here is a quick snapshot of what ingredients are in this recipe. Please see the recipe card below for specific quantities.
Tangzhong
- Milk – Provides the liquid needed to hydrate the flour and create the thick paste.
- Bread flour – Use the same bread flour as the milk bread dough. When cooked with milk, it forms the Tangzhong base, which helps the loaf retain moisture and creates a soft and fluffy texture.
Milk Bread Dough
- Milk – Adds richness and contributes to the tender crumb.
- Caster sugar – Adds sweetness and helps with browning.
- Active dry yeast – Helps the dough rise and creates a light, airy texture.
- Bread flour – Provides the gluten structure needed for a soft yet well-developed loaf. Use bread flour with around 12–13% protein content to help create a strong gluten network, giving the bread its signature fluffy texture and beautiful stretch.
- Fine sea salt – Enhances the flavour and balances the sweetness.
- Egg – Adds richness, colour, and helps create a tender texture.
- Unsalted butter – Adds flavour and gives the bread its soft, pillowy texture.
For Proofing
- Vegetable oil – Prevents the dough from sticking to the bowl while it rises. You can use any flavourless oil, such as canola, or sunflower oil.

Tips for Success
- Measure Ingredients Accurately – Bread making relies on the right balance of flour, liquid, and fat. Use a kitchen scale for the most accurate results, especially when measuring flour.
- Cook the Tangzhong Until Thickened – The Tangzhong should be cooked gently until it reaches a thick, paste-like consistency. This step helps the bread hold more moisture, creating a soft and fluffy crumb.
- Knead Until the Dough Passes the Windowpane Test – Proper gluten development is essential for that signature milk bread texture. The dough should stretch thin enough to let light pass through without tearing.
- Avoid Adding Too Much Extra Flour – The dough may feel slightly sticky at first, but resist the temptation to add more flour. Too much flour can make the bread dry and prevent the loaf from staying soft.
- Give the Dough Enough Time to Proof – Allow the dough to rise until it has properly expanded rather than relying only on the clock. The proofing time can vary depending on your room temperature.
- Roll the Dough Tightly When Shaping – A firm, even roll helps create a neat loaf with beautiful layers inside. Make sure the seam is pinched closed so the dough stays tightly rolled during proofing and baking.
- Do Not Skip the Second Proof – The final proof allows the shaped dough to become light and airy before baking, giving you a soft and fluffy loaf.
How to Serve
- Fresh and Warm: Enjoy a slice on its own while the bread is still soft and fluffy.
- Breakfast Favourite: Serve toasted with butter, jam, honey, or your favourite toppings.
- Sandwich Bread: Use it for sweet or savoury sandwiches thanks to its tender crumb.
- French Toast: Transform leftover slices into a rich and delicious breakfast treat.
My Favourite Way to Enjoy Milk Bread
One of my favourite ways to enjoy this milk bread is to spread butter on both sides and pan-fry it until golden. A little sprinkle of black pepper takes this simple toast to a whole new level. The outside becomes lightly crisp while the inside stays soft and fluffy — you may never look at a toaster the same way again!

How to Store
- At Room Temperature – Store the milk bread in a cake storage container or a sealed bag at room temperature for up to 3 days. Keep it away from direct sunlight and heat to help maintain its soft texture.
- Freeze for Longer Storage – If you don’t plan to finish the loaf within a few days, freezing is the best way to preserve its freshness. Slice the bread first, place the slices in a freezer-safe bag, and freeze for up to 1 month.
- How to Reheat – To enjoy the bread as if it were freshly baked, thaw frozen slices at room temperature or warm them gently in the microwave for a few seconds before serving.
My Storage Method When Making Multiple Loaves
When I bake two loaves at a time, I usually slice the extra loaf and store the slices in an airtight bag in the refrigerator. This keeps the bread fresh for up to one week. When ready to serve, simply warm it up as usual — the bread becomes soft again while still keeping a lovely crust on the outside.
Although milk bread can also be frozen, I don’t usually freeze it because this loaf rarely lasts more than a few days in my kitchen! However, freezing is a great option if you want to store it for longer.

Frequently Asked Questions
Tangzhong is a technique where flour and liquid are cooked together to create a thick paste before adding it to the dough. This helps the bread retain more moisture, resulting in a softer, fluffier loaf that stays fresh longer.
A few things can affect the texture of milk bread, including insufficient kneading, adding too much flour, or under/over-proofing. Proper gluten development and allowing the dough enough time to rise are key to achieving a soft and fluffy loaf.
The dough is ready when it passes the windowpane test. A small piece of dough should stretch thin enough for light to pass through without tearing, showing that the gluten has developed properly.
Yes, you can knead the dough by hand. It will take longer, but continue kneading until the dough becomes smooth, elastic, and passes the windowpane test.
Store the loaf in an airtight container or sealed bag at room temperature for up to 3 days. For longer storage, slice the bread and freeze it for up to 1 month.

Description
This super soft milk bread loaf uses the Tangzhong method to create a light, fluffy crumb and tender texture. A beginner-friendly recipe for bakery-style bread at home.
Ingredients
For the Tangzhong
- 100 ml milk
- 20 g bread flour
For the Milk Bread
- 125 ml milk
- 30 g caster sugar
- 1 tsp active dry yeast
- 335 g bread flour
- 1/2 tsp fine sea salt
- 1 large egg
- 55 g unsalted butter, softened and cut into pieces
- 1 tsp vegetable oil, for bowl
For the Egg Wash
- 1 egg
- 1 tbsp milk
Instructions
Make the Tangzhong
- Whisk the milk and bread flour together in a small saucepan over low heat.
- Cook for 2–3 minutes, whisking constantly, until the mixture thickens into a smooth, translucent paste.
- Transfer the paste to a small bowl. Cover with cling film (pressed directly against the surface to prevent a skin from forming) and let it cool completely to room temperature.
Mix and Knead the Dough
- Warm the 125 ml of milk in a heatproof jug (about 30 seconds in the microwave) until lukewarm (approx. 38°C / 100°F).
- Stir in the caster sugar and active dry yeast. Cover with a clean tea towel and leave to stand for 5 minutes until frothy.
- In the bowl of a stand mixer, whisk together the bread flour and fine sea salt. Make a well in the centre.
- Pour the egg, the frothy yeast mixture, and the cooled Tangzhong paste into the well.
- Attach the dough hook and mix on low speed until a shaggy dough forms.
- With the mixer still running, gradually add the softened butter, one piece at a time, letting each piece incorporate before adding the next.
- Increase the mixer to medium speed and knead for 8–10 minutes. The dough is ready when it is smooth, elastic, and passes the windowpane test (you can stretch a small piece into a thin, translucent membrane without it tearing).
- Lightly oil the sides of your mixing bowl.
- Roll the dough around right inside the mixing bowl until its surface is completely covered with oil.
- Cover the bowl tightly with a lid or cling film and place it in a warm spot to proof for about 1 – 2 hours, or until doubled in size.
Shape the Dough
- Once the dough has doubled, remove the lid or cling film, dust lightly with flour, and knock out the air. Transfer to your work surface.
- Knead gently for 2 minutes and shape into a smooth ball by dragging the dough toward you while tucking the edges underneath. Cover with a tea towel and rest for 15 minutes.
- Divide the dough into 3 equal pieces (total weight is 703 g, so about 234 g each).
- Shape each piece into a smooth ball by pulling the sides down and rolling lightly on the work surface. Cover with a tea towel and rest for 15 minutes.
- Flip each dough ball sticky-side up, then flatten it by pressing with your knuckles into a flat disc.
- Roll the disc into a rectangle roughly 15 x 26 cm. Fold both long sides inward so the width of the dough fits into your bread tin.
- Roll it tightly from the top down and pinch the end to seal. Arrange the rolled dough balls side-by-side in the bread tin. Repeat this step for the remaining dough pieces.
- Cover the bread tin with a tea towel and let the dough proof for the second time (about 45–60 minutes, or until it rises near the rim).
Bake the Bread Loaf
- When the second proof is almost complete, preheat the oven to 180℃ (fan).
- For a golden finish, mix the egg and milk to create the egg wash, and brush a thin layer over the top of the loaf.
- Bake in the preheated oven for 23–25 minutes, or until deep golden brown.
- Once done, remove the loaf from the tin and allow it to cool on a wire rack. Serve warm and enjoy!
