Delicated Bundt Cake Trays
I am always fascinated by the different types of bundt cake trays, not matter is a big one or for a mini bundt cake, I especially like this six in one bundt cake tray which I think it is perfect for this recipe, Banana Cinnamon Bundt Cakes.
All the bundt cake trays are so delicate in their shapes and the variety of their sizes. ย If you have a closer look at a bundt tray, the patterns are very sophisticated. The most common one is round but some are square. Other designs are unique, such as the spiral, crown, rose, star or leaf patterns. ย When I was writing this post, I even found a beehive shaped one! That is an essential gadget for Bakabee to buy! I am inspired by these beautiful shapes and I will use this design to make a lemon honey bundt cake – Iโll let you know how it turns out. ย ย
Over the past few years, I have collected a few bundt cake trays. I love using them to bake cakes for special occasions to pump up the party atmosphere. When my guests see bundt cakes, their first reaction is always โWow! They are so pretty!โ Because of the unique shapes, they just need to be decorated with very simple drizzle-glaze or dusted with snowy icing sugar. I sometimes even serve with no decoration at all because I like seeing the original design of the cake. General rule: please do not over-decorate ๐

Bundt Cake Recipe
Bundt cake is not a particular kind of cake recipe. It is not like sponge cake or chiffon cake which are related to certain kinds of baking techniques or ingredients. So you can use a regular recipe in a bundt cake tray.
Bundt Cake Baking Tip
For the best result, you should just fill up to 2/3 batter in the tin to ensure that it will not overflow when in the oven.
So the next question is how long should you bake it for? Well, it will depends on the cake batter. A traditional 12-cup Bundt tray, may need to be baked between 35 and 60 minutes, depending on the batter density. If you do not know the capacity of your specific pan, just fill the pan with cups of water and measure how many it takes. The total number of water cups will be the same as your tray capacity. Then you can estimate how much time you need to get the cake done. Sorry, there is no one-size fits all answer for the baking time for the Bundt cake but watch them carefully when you bake the first time and test to see if they are baked.
When you see the top of the cake turns golden, it is time to insert a toothpick and if it comes out clean, it means the cake is done.
Left-over Batter
If I have some left-over batter, I will line a cupcake tray with cupcake liners. ย Then I pour the left-over batter into them and bake it in the oven with my other six banana cinnamon bundt cakes. ย Be careful, though, they will cook faster! I would set the timer for about 10 minutes in order to check them and monitor carefully after that if not quite done. ย They will certainly be ready well before the bundt cakes.
Now I am going to share this simple recipe. ย If you read my last post, youโll know I like to find a tasty way to use up overripe bananas. ย This week, I add one star ingredient into the previous recipe which will enhance the flavour and change the personality. ย The star guest is: cinnamon.
I always think that cinnamon is like durian. ย Some people like it a lot but some canโt stand it. If you donโt like it, you can ignore this advice but really, it tastes great with banana – it will give you a surprise! Why not try it at least once?

Description
In the recipe, I add one star ingredient – cinnamon into the recipe. It gives the cake an extra kick and enhances the flavour even more! Once the cakes are done, they were gone in a day! It is a MUST try recipe!
Ingredients
- 100 g all purpose flour
- 50 g self-raising flour
- 1/2 tsp salt
- 1/2 tsp bicarbonate of soda
- 1/2 tsp baking powder
- 1 tsp ground cinnamon
- 1 tsp lemon juice
- 1 1/2 tbsp milk
- 100 ml yoghurt
- 130 g ripe banana ((one medium))
- 140 g unsalted butter (at room temperature)
- 100 g caster sugar
- 1 1/2 tbsp dark brown sugar
- 2 pcs medium eggs
- some snowy powdered sugar (for decoration (optional))
Instructions
- Preheat the oven to 160ยฐC. Grease a 6-cavity Bundt cake tray VERY generously and dust with flour. Invert the tray and shake out excess flour. Set aside (this is very important to avoid the cake getting stuck in the tray).
- For the dry ingredients, sift all-purpose flour, self-raising flour, bicarbonate of soda, baking powder, salt and cinnamon together in a large mixing bowl.
- In another mixing bowl, mash bananas, lemon juice, milk and yoghurt together until smooth. Set aside.
- Using an electric mixer with a paddle attachment, beat butter until light and fluffy and add caster sugar and brown sugar at medium mixing speed for about 5 minutes.
- Add eggs one at a time and beat for 10 seconds after each addition. Mix in vanilla extract.
- Add flour mixture and banana mixture to butter mixture in 5 portions. Begin with flour mixture, then banana mixture alternatively and end with flour mixture. Combined well after each addition.
- Pour batter into prepared Bundt tray and bake for 45-50 minutes (see above for time estimation) or until a toothpick inserted into the centre of cake comes out clean.
- Remove from the oven. Let cakes sit for 15 minutes before inverting tray onto a wire rack. Set aside to cool completely before un-moulding.
- Use a skewer or a toothpick to un-mould the cakes gently.
- Sprinkle snowy powdered sugar on top of the cakes (optional).
- Enjoy with a cup of tea or coffee!

Banana Cinnamon Bundt Cakes out from the oven
They look beautiful, donโt they? ย I just canโt stop looking at the sharp edges of the swirls. Believe me, once you have a Bundt cake tray, you will become addicted to it. ย When the cakes are still in the oven, you canโt image how beautiful these cakes will be. ย However, after you un-mould them, you will fall in love with them.
These cakes do not only look stunning, they also taste really good. They are light and full of banana and hidden mild cinnamon flavour. What a great excuse to sit down for a cup of tea or coffee at anytime of the day (or night!).
